Banana Nut Oat Flour Muffins (Gluten Free, Dairy Free, Egg Free & Refined Sugar Free)

Total Time: 45 minutes

Yields 12 Large Muffins


In a medium bowl, combine these "dry" Ingredients

Make The Egg


In a large bowl, combine these "wet" ingredients



Step 1. Preheat oven to 400 degrees


Step 2. Line 12 cup muffin tin with paper liners


Step 3. In a medium bowl, combine "dry" ingredients as listed above, mix well


Step 4. Mix egg substitute ingredients in a small dish, set aside to thicken


Step 5. In a large bowl, mix "wet" ingredients as listed above, add your "egg", mix well


Step 6. Gradually stir in dry ingredients into the wet. Be sure not to over mix.


Step 7. Fill muffin liners full of batter, add any extra batter to any muffins that may be less full


Step 8. **If using using chocolate chips, sprinkle each individual muffin with a few chocolate chips as a topping


Step 9. Bake for 15-18 minutes, until golden brown on top, and toothpick comes out clean


Step 10. Remove from oven, let sit in muffin pan for 3-5 minutes before taking them out to cool.

I hope you will enjoy these muffins as much as we do! They are husband and kid approved, and even co-worker approved! I stumbled into making this recipe on my quest to try to eliminate gluten, dairy, and refined sugar from my recipes. I had some extremely over-ripe bananas sitting on my counter so I started experimenting!


This is my first time working with oat flour. In my opinion it is very similar to the all purpose flour everyone knows. Oat flour is high in fiber and low in glycemic index, which means it is less likely to spike your blood sugar. Balancing blood sugar is a non-negotiable and is imperative for balancing hormones and maintaining overall health.


I also formulated this recipe to have lots of high omega 3 ingredients to help fight inflammation in the body! Addressing inflammation is one of the three main roots to consider when addressing any health concern. Walnuts, chia seed, flaxseed, ghee and hemp are all great sources of omega 3's.


You will also see that I incorporated my favorite vegan protein shake into this recipe for added protein. No, I'm not vegan. I try to avoid dairy since it upsets my digestive tract. I tried multiple dairy free/vegan protein shakes in my efforts to cut out whey protein. Then, I came across Earth Chimp, it exceeded my taste and texture standards! It is now a staple in my kitchen and a great protein boost after a workout. Earth Chimp is even great in baked goods! You can't find a vegan protein powder that is much better than that!


What the hell is ghee? Ghee is clarified butter, which means all of the milk has been removed, so it is safe for an individual who is lactose intolerant. I personally have just recently discovered ghee, can't believe I had never come across it before. It has such a rich buttery flavor. This is one of my new favorite staples to keep in the kitchen. Great in baked goods and so so good for cooking vegetables or to use for browning my rice. So versatile!


I have been freezing these muffins to pull out and send with my husband for his lunches in the morning! They have been storing well. Great for breakfast or an afternoon snack! This recipe is simple and easy to throw together in under an hour!
